In a subtle blend of flavours, pulissery uses a fine paste of grated coconut, garlic, shallots, cumin seeds and green chillies. This fine paste is tossed in with cooked cucumber and buttermilk, and simmered on low flame. This aromatic curry is tempered with a splutter of mustard and fenugreek seeds along with red chillies and curry leaves. Doesn’t it sound like a burst of flavours already?
