South Indian Recipes: How To Make Restaurant-Style Tomato-Onion Uttapam at Home

The first time I was introduced to Uttapam, I was told that it is a kind of desi pizza, except it is made on a griddle. While the parallel was not entirely incorrect, it was however, slightly unnecessary. Uttapam will strike a chord with anyone who enjoys all things crispy, loaded and flavourful; with or without ‘fancy’ comparisons. For the uninitiated, Uttapam is a South Indian snack or breakfast that is made with rice batter on a griddle or tawa. It is often topped with chopped vegetables like onions, tomatoes, green chillies etc. Unlike a dosa, it is not rolled up. It is typically of the size of a quarter plate and is enjoyed with sambhar, chutney and podi masala. If you are diet-conscious, you can also choose a rava base for your uttapam instead of rice.

Here’s a recipe of Onion-Tomato Uttapam you can try at home 


Ingredients Of Uttapam 

  • 350 Gram Rice (parboiled) 
  • 80 gram Urad dal (Urad dhuli)
  • (split and husked) 
  • 1/2 tsp Fenugreek seeds 
  • 2 tsp Salt 
  • 1 cup of chopped onions 
  • 1 cup of chopped tomatoes  
  • 2 tsp finely chopped coriander 
  • 2 tsp finely chopped green chillies 
  • Oil or butter as required

How to Make Uttapam 

1. Soak rice, dal and methi in water for 5 hours. 

2. Now take a mixer-blender, and grind this soaked mixture with salt and enough water to make a dropping consistency.  

3. Leave this mix to ferment for 5-6 hours.  

4. Heat the tawa and brush some oil over it. When hot, splash a little water and pour one cup of batter on it. Let it spread.  

5. Add chopped onions, tomatoes, green chillies, coriander leaves on top. (It is a good idea to combine them all together in one bowl beforehand and then use as much required.) 

6. When the edges start to brown a bit, add a trail of oil around your uttapam. 


7. Turn it over, allow it to cook and serve hot.
