Ever Tried Anda Ghotala? The Smashing Street Food Recipe Involves No Scam!

It is not easy to advertise street food. There is no cash flowing from big investors here; so more often than not, these vendors have to rely on word of mouth praise. But there are some who find ingenious ways to market their dishes, one of the ways is to give your dish such a unique name that people cannot just ignore and walk away. If you think about it, the trick is not new. Did you know that many dishes that carry the prefix “Mughlai” in Bengal, may actually have no ‘Mughal link’ at all, many historians believe that it was just a means to draw more customers? Then there’s a ‘Thaggu Ke Ladoo’ that is proudly ‘cheating’ its customers for years in a row (you can read the hilarious story here). ‘Gadbad Falooda’, ‘Benami Kheer’, ‘Daulat Ki Chaat’, there are so many examples around us. One such street food is ‘Anda Ghotala’. ‘Ghotala’ in Hindi refers to a scam or some kind of disorder. It is said that the fiery dish rose to prominence in Surat. It slowly made its way to Mumbai became a sensation again. Anda Ghotala is basically, chunks of eggs mixed in bhaji (of pav bhaji), finished off with a fried egg. So the real ‘ghotala’ here is just a simple addition of egg, and guess what? It makes for the yummiest ‘scam’ ever. Egg gives this recipe a wholesome quality and adds bulk. It is so easy to make, that you would be making it again and again.

Pav bhaji is one of Mumbai’s iconic street foods.

Here’s the recipe of anda ghotala:

Ingredients:
3 tbsp butter
1 tsp cumin seeds
8 cloves of garlic
2 medium-sized onions, finely chopped
2 tomatoes, finely chopped
2 green chillies, finely chopped 
1 tsp haldi
2 tsp red chilli powder
1 tsp jeera powder
1 ½ tbsp. pav bhaji masala
4 boiled eggs, roughly chopped
4 Whole eggs

Method: 
1. Take a pan and heat the butter.
2. When the butter begins to melt, add cumin seeds. Allow it to sizzle. 
3. Add garlic and sautee for few seconds.
4. Now add onions and green chillies. Cook on medium flame until onions get a nice golden colour. Stir occasionally. 
5. Once the onions are done, add salt, red chilli powder, turmeric powder, coriander powder and cumin powder. Stir.
6. Next add chopped tomatoes, add some water. Cover the lid and let the tomatoes cook and become a little mushy. 
5. After about 5 minutes, uncover the lid. Take a potato masher and mash the onions and tomatoes. And then add pav bhaji masala. 
6. Break two eggs in a bowl, add them to the tawa. On medium heat begin to scramble it with the onion-tomato masala. 
7. Now add the boiled eggs to the mixture and mix well. 
8. Now make 2-3 sunny side ups or fried eggs in another pan and serve it atop your anda ghotala with a  few buttery pavs on the side.
